At Lunch Break’s Alliance for Success Career Exploration Workshop, we had the incredible opportunity to learn from Chef James Avery, a highly respected chef, entrepreneur and restaurateur with a dynamic career in the culinary world. As the first session in our three-part Career Exploration Series, this workshop set the tone for an exciting and impactful season of learning.

As the Owner and Executive Chef of The Bonney Read, a celebrated seafood hall in Asbury Park, The Black Swan, recently sold to BarCo Brands, partner with the Palmetto Southern Kitchen + Bar in Asbury Park and founder of Nicely Done Hospitality Group (dedicated to elevating the dining experience by expertly conceptualizing, managing, designing, and developing premier restaurant brands), Chef Avery brought a wealth of knowledge and experience to the event, setting the stage for an engaging and impactful three-part series.

Before becoming a successful restaurateur, James honed his skills in high-profile kitchens, including working as a sous chef under celebrity chef Gordon Ramsay on shows like Hell’s Kitchen and Kitchen Nightmares. He has also collaborated with top industry professionals and managed culinary operations at prestigious restaurants such as the Sea Blue by Michael Mina in Atlantic City. His experience spans from fine dining to casual eateries, showcasing his versatility and deep knowledge of the field.

During the workshop, Chef Avery captivated students with his personal journey, offering insight into the challenges and triumphs that shaped his career. He emphasized that success in the culinary industry (or any professional career) requires passion, perseverance and continuous learning.

  • Following Your Passion: He encouraged students to lean into their strengths and natural interests, rather than feeling pressured to take a traditional college path.
  • Education & Training: Chef Avery shared how apprenticeships, mentorships and on-the-job training can be powerful tools for building skills and advancing in the field.
  • Financial Considerations: He advised students to explore scholarships, grants and apprenticeships as ways to minimize debt while gaining practical experience.
  • Entrepreneurship & Business Acumen: As the owner of multiple successful restaurants, Chef Avery underscored the importance of business skills in the culinary world.
  • Community & Mentorship: Perhaps one of the most important lessons of the night was about giving back. Chef Avery spoke about the value of mentorship, strong relationships and supporting the community, values that align deeply with the mission of Lunch Break and the Alliance for Success program.

The energy in the room was electric as students engaged in thoughtful discussions asked insightful questions, and walked away with a new perspective on career possibilities. Chef Avery’s openness about his journey made his advice even more impactful.
